This was more or less a try. The goal was to compare the overall time and some more points vs. a complete “Boston Butt” cut.
In short:
The overall time was 7h.
The “Boston Butt” last time took 11.5-12h.
Both cooks had 2.5kg meat.
Conclusion: The two pieces have more overall bark and and it took 4-5h less compared to one big chunk of meat.
Juiciness was incredible good.
I guess I would prefer two pieces in the future.
