Today I tried a dry aged pork T-Bone from my favourite butcher. The taste is just impressive.
It’s maybe the best meat I ever tasted. You have to taste it because I can’t describe how super delicious it is.
- Indirect up to 42°C (108°F) core temp. (Ambient temp 140-160°C (284-320°F))
- Direct (full power) for a nice sear on both sides up to a core temp of 54-60°C (130-140°F)
