My butcher offered me the chance to get some nice Duroc pork-shoulders.
I used my trusty WSM 18″ (47cm) to prepare 3 pieces of Duroc and 3 pieces of „standard“ pork.
There is no question about it, the Duroc is much more moist and tender.
